Guilt Free Blueberry Pancakes

It’s Shrove Tuesday, so let’s all celebrate it with this fantastic pancakes receipe. If you are gluten or dairy intolerant, don’t worry, these pancakes are also perfect for you! They have been carefully put together by our comfort food cafe partner in London – Coup. Check them out here.

Did you ever wonder where the name shrove comes from? We did, so we will share this with you! Shrove comes from shrive which means to confess. Usually on Shrove Tuesday, people went to confess their sins, so that they could start the Lent period free of bad thoughts. 

Ingredients:

  • 2 cups coconut flour
  • 2 tbsp xylitol
  • 1 tbsp baking powder
  • 3/4 tsp of fine grain sea salt
  • 1 3/4 cups of coconut or almond milk
  • 2 tbsp of coconut oil, melted
  • 2 tsp of vanilla
  • 1/2 cup of blueberries

 

    Directions:

     Add the flour, sugar, baking powder, and salt to a bowl. Whisk the ingredients together. Then add the nut milk, the melted coconut oil, and the vanilla. Let the batter sit for about 15 minutes (this allows it to thicken up and creates a fluffier pancake). After they rest for about 15 minutes, add the blueberries.

    Heat a frying pan over medium heat. Add a tiny bit of coconut oil so the pancakes won’t stick. Use a 1/4 cup measure to spoon the pancake batter into the pan (this will create even sized pancakes). Don’t flip the pancakes until they begin to bubble around the edges or it seems like the cake is beginning to set.

    The second side should only take 1-2 minutes to cook. Serve immediately with a small dollop of coconut yoghurt.

    And remember you can enjoy your pancakes guilt free this year as they are gluten and dairy free! This receipe serves 2-3 persons.
